Palm Springs Progressive Dinner – “Locals’ Delight”

Part 2 – In a Delicious Three-part Series

 By Barbara Beckley

Cocktails and dining. It’s Palm Springs’ signature activity. And with so many fine restaurants close together, it’s easy – and fun – to plan a Progress Dinner party! Begin at one restaurant for cocktails, then go to a second for the main course and end at a third for dessert. What’s a party without a theme? Choose “Locals’ Delight” and dine like you live here – enjoying the cuisine and comradery residents love.

 Residents’ Choice

Palm Springs Progressive Dinner

Residents’ Choice Stop 1 – Tonga Hut

Get the party started with an exotic beverage – or two – at The Tonga Hut Restaurant and Tiki Bar in the heart of downtown. Make your way upstairs past tiki gods and tapa cloth to the second-floor terrace overlooking the street action below. Or around the tiki-tricked-out fireplace in the bar. The Mai Tais are magic – based on Trader Vic’s 1944 recipe. So is the “Navy Grog,” with three rums, citrus, honey and a little “Tonga Hut Twist.”

tonga-hut-palm-springs-fireplace-room

Someone must order a “Vicious Wahini,” lovingly concocted with rich Barbados rum, honey, and passion fruit puree. And local favorite “Bermuda Dunes,” a Tonga Hut Palm Springs original, created in honor of the desert community of the same name, with gold and silver rums, citrus, almond and allspice.

For nibbles, share the Spam Pork Sliders. It’s not truly tiki without Spam! Or the signature Pu Pu Platter. If you’re from LA – yes, this is the sister restaurant to The Tonga Hut North Hollywood! Like most visitors, Tonga Hut co-owner Kevin Murphy and his wife, Claudia, fell in love with Palm Springs and had to be part of the scene, opening The Tonga Hut Palm Springs in 2013.

Residents’ Choice Stop 2 – Eight4Nine

For dinner, walk across North Palm Canyon Drive a few blocks to Eight4Nine Restaurant & Lounge – a locals’ go-to since it opened in 2015. No wonder. The ultra-refined décor – think black and white – is a perfect match for the ultra-refined new American cuisine. Sit in the canopy-covered outdoor patio. Or inside, at the see-and-be-seen high-top tables in the bar. Or white Louis XIV-style chairs in the dining areas.

Eight4Nine

The menu is deliciously eclectic. “Greens from the Garden” makes an excellent beginning with artisan lettuce, baby heirloom tomatoes, Persian cucumber, and purple Ninja radish, dressed with citrus fennel pollen vinaigrette. Also “Corn & Crab Chowder” using wild Mexican blue crab (optional), Weiser Farm peewee potato, applewood smoked bacon, herb oil and piquillo pepper. Chowder doesn’t get any better than this! Or perhaps share the “Charcuterie & Cheese Plate” of fine meats, three types of premium cheeses and lavash, garnished with house-made jam, berries, Marcona almonds, honeycomb, and orchard-dried fruit.

Eight4Nine Restaurant

For your entree – Oh my! The “Allan Brothers Beef Filet Mignon” is a meat-lover’s dream. Pan seared, with parmesan and cypress grove goat cheese au gratin, and Haricot Vert, baby carrots, crispy fried onion, and red wine sauce! Seafood favorites include “Grilled Scottish Salmon,” with a shaved fennel-basil salad, star anise-infused orange sauce and black sesame rice cake. And “Miso Marinated Chilian Seabass,” with jasmine rice, baby carrots, baby bok choy, a soy lime ginger glaze, Daikon sprouts, toasted sesame seeds and finger line caviar.

For a lighter entrée, the signature “Smoked Niçoise Salad” is amazing. Featuring Eight4Nine smoked steel head salmon, artisan greens, peewee potatoes, niçoise olives, Haricot Vert, baby tomatoes, lemon, capers, Gone Straw Farm egg, tossed with tarragon vinaigrette.

Residents’ Choice Stop 3 – Seymour’s

Hop in the car for a custom-crafted nightcap at Seymour’s a thee-minute drive away. It’s one of those “you have to know to know” kind of places. A dark, intimate bar accessed by an unmarked door behind a velvet curtain at Mr. Lyons steakhouse. Sink into an overstuffed leather chair or a high-top chair at the black-and-white tiled bar, dimly lit by Tiffany lamps, and enjoy one of co-owner mixologist Steen Bojsen-Moller’s signature original cocktails.

“The Little Owl” is a hands-down favorite, with Rittenhouse Rye, IPA Reduction, Bigallet China China, Vicario Nocino and Orange Bitters. Also, the “Last One,” with Silver Tequila, Banhez Esadin & Barril Mezcal, maraschino, green chartreuse, Cointreau, cava, and coriander – oh my!  And “The Ultimate Sidecar” using Delord Heritage Over 40-year-old Armagnac, Grand Marnier Curvee De Centenaire, and fresh lemon.

Insider Intel Stop 1  – Oscar’s

Set the scene for good times at Oscar’s Downtown Palm Springs, a happening hot spot amid the Mediterranean-style architecture of Palm Springs’ historic Old Town. Linger at a table in the street-front courtyard framed by twinkly lights and Spanish arches. Or at the bar inside the palapa-like, red tile-roofed kiosk.

They call it “lemonade.” But don’t be fooled. Oscar’s favorite signature libation is laced with plenty of vodka! Like the “Peach Palmer,” with Deep Eddy Sweet Tea vodka, Smirnoff Peach vodka and, oh yes, lemonade. Delish “Strawberry Lemonade,” featuring Smirnoff Strawberry vodka, Strawberry puree and lemonade. And deceptively refreshing “Mango Pineapple Lemonade” of Svedka Mango Pineapple vodka, mango puree and lemonade.

The crispy house-battered jumbo onion rings, with ranch and chipotle sauces makes a great taste counter point. Champagne, of course. From Ruffino Prosecco to Dom Perignon. And fine wines. The “Interesting Red” is just that – a Numanthia-Termes Tempranillo from Spain. Just as the lemonade, Oscar’s is more than it appears. Consider returning for the Sunday Drag Brunch and other live cabaret shows.

Insider Intel Stop 2 – Johannes

Ready for dinner? Take a short walk to Europe – well, almost. To Johannes  for modern Euro cuisine so good The New York Times and Wine Spectator give it raves. Simple elegance sets the stage for Austrian-born Chef/Owner Johannes Bache’s classic, eclectic menu. Formerly corporate chef for Seabourn Cruise Line, his creativity knows no limits.

johannes

For starters, the signature favorite is a must. “JB’s Ultimate Cheese Spatzeln,” with sautéed house-made noodles in melted Gruyere and Fontina cheeses, lobster, bacon, crispy onions, and chives. Incredible! Also, the “Escargot,” with eight baked in garlic, bread crumbs and green herbs. Maybe think outside the box with chef’s “Malaysian Meatballs” braised in yellow curry coconut sauce, toasted almonds, chives, and coconut flakes!

For your entrée, Bache’s classic signature “Wiener Schnitzel” is a favorite, with roasted parslied fingerling potatoes, cranberries, and lemon cucumber in dill sour cream dressing. And the “Crispy Roasted Maple Leaf Farm Half Duck” – fantastic – with braised red cabbage, polenta cake, and orange sauce! Also, seafood like the “Pan Seared Maine Scallops,” with sweet potatoes, fire-roasted corn, leek, Shiitake mushrooms, wild arugula, and Black Truffle reduction. And meat. The “Creekstone Farms Black Angus Beef Tenderloin” has it all: sauteed spinach, glazed carrots, fries, and brandy green Madagascar peppercorn sauce.

Johannes schnitzel

Insider Intel Stop 3 – Melvyn’s

Celebrate your fabulous evening at Melvyn’s Restaurant & Casablanca Lounge , Palm Springs’ favorite old school piano bar, a short drive up the road. The lights are low. The bar is long. The keyboard player is singing the Great American Songbook just as when Frank Sinatra and all the stars – like you – dropped in for a nightcap and dessert.

Melvyns Restaurant_Bar

Play the part and order a “Melvyn’s Martini” – original or with a blue cheese-stuffed olive. Or “Melvyn’s Manhattan,” with house barrel-aged bourbon, sweet Vermouth, and angostura bitters. For dessert, ask the bartender for deliciously old school “Bananas Foster,” featuring caramelized bananas, dark rum, banana liqueur and vanilla ice cream. And “Cherries Jubilee,” with dark sweet cherries, orange zest, brandy, and vanilla ice cream.

Bon appetite!

See the World’s Largest Reserve of Fan Palms

Washingtonia filifera, also known as desert fan palm or California fan palm, is a flowering plant in the palm family. Growing to 49-66 feet tall and 10-20 feet wide, it is the only palm native to the Western United States and the country’s largest native palm.

Man stands beneath giant palms in desert oasis

The Cahuilla and the Fan Palm

The history of the Cahuilla Indians is interwoven the desert fan palm. Filifera means “thread-bearing” and Washingtonia is a nod to the first president, George Washington.

The desert palm is a sign that signifies “water is here.” It is recognizable not for extreme height — it’s stouter and shorter than the Mexican palm — but for the puffy “cloak” of dried leaves hanging down its trunk. Its nourishing moisture runs throughout its trunk, so it forms no annual rings and is rarely harmed by fire. Fire actually helps desert fan palm groves, driving out burrowing insects, stripping off the palms’ cloaks, and letting sunlight reach the ground for hundreds of new palm seedlings to sprout.

The Cahuilla located permanent villages at large palm groves, where oasis waters evaporate into the leaves, creating a moist, shady, cool microclimate that attracts game and fosters myriad useful plants such as cottonwood, mesquite, and willow.

They turned the dried leaves of the palm into huts, sandals, and cooking utensils. They harvested the sweet fruit for food. Seeds were also used for gourd rattles. All of these materials were regularly traded with nearby Indian tribes. By transporting the fruit and seeds to other camps and settlements in the mountains and valleys, the Cahuilla were integral to the spread of the desert fan palm.

Palm Creation Myth

The Cahuilla have a creation myth that best illustrates the way they conceptualize their culture as interlinked with the desert palm. In the myth, the first Cahuilla man, Ma-ul, was growing old. Faced with his own mortality, he wanted to leave his people with something of lasting value. When he realized there were no palm trees, he knew what to give his people.

Legend has it that after finding a nice spring where water was coming out of the ground, he stood still and firm until slowly roots took hold and bark formed around his legs. Then, from his hair sprouted palm fronds. Ma-ul turned himself into the first palm tree in the desert.

See the World’s Largest Reserve of Filifera

Fact: Palm Canyon holds the world’s largest reserve of filifera.

Palm Canyon includes indigenous flora and fauna, which the Cahuilla people so expertly used, and its abundant Washingtonia filifera, breathtaking contrast to the stark rocky gorges and barren desert lands beyond. A moderately graded foot path winds down into the canyon for picnicking near the stream, meditation, exploring, hiking or horseback riding. While in Palm Canyon visit the Trading Post for hiking maps, refreshments, Indian art and artifacts, books, jewelry, pottery, baskets, weaving, and conversational cultural lore.

Fact: Andreas Canyon has the second largest reserve of Filifera.

Palm Canyon, Andreas Canyon, and Murray Canyon make up the larger Indian Canyons.

The contrasting greens of the magnificent fan palms and more than 150 species of plants within a 1/2 mile radius creates a lush oasis. A scenic foot trail leads through the canyon passing groves of stately skirted fan palm, unusual rock formations and the perennial Andreas Creek. One can still see bedrock mortars and metates used centuries ago for preparing food. This tranquil setting is excellent for photography, bird-watching, or a picnic at one of the tables along the trail.

Jalama Wines

Jalama wines come from Jalama, a coastal city 60 miles north of Santa Barbara. They operate two vineyards.

The Cargasacchi Vineyard is one of the few areas in the Sta. Rita Hills where the botella clay loam is exposed, along with the diatomaceous earth, and Monterey shale, producing crisp and distinct minerality. These 12 acres of Pinot Noir consist of Dijon 115 clone.

The Jalama Vineyard is one of the western-most vineyards in the U.S. The coastal weather on three sides keeps the vineyards cool. Soils are predominantly adobe clay. These 15 acres are primarily Pinot Noir (Dijon 114, Dijon 115 and Mt. Eden clones), along with Pinot Gris, Viognier and some cool climate Syrah.

Mark Cargasacchi is the winemaker. As a young man, growing up on the family ranch on Jalama Road didn’t hold much future for Lompoc native. With cattle and bean prices stagnant, Mark decided the only way to make a living was to leave. After successfully pursuing a career in environmental chemistry in Texas and San Francisco, word was getting out about the amazing wine being produced by Richard Sanford in the area now known as the Sta. Rita Hills. This piqued Mark’s interest and he returned home to help plant the first of the family vineyards back in 1999.

$20 tasting fee for up to 5 wines. Waived with the purchase of two bottles of wine. Located in La Plaza.

Hyphen Natural Wines

Hyphen Natural Wines is a unique wine shop that specializes in natural wines. Natural wines are an increasingly popular category of wines that are produced with minimal intervention and additives during the winemaking process. When we say a wine is “natural,” it means that the grapes used to make the wine are grown without the use of synthetic chemicals, such as pesticides or herbicides. Additionally, natural winemakers typically rely on organic or biodynamic farming practices to cultivate their grapes.

In the winery, natural winemakers adopt a hands-off approach, allowing the fermentation process to occur naturally without the addition of commercial yeasts. They also avoid the use of additives or adjustments commonly found in conventional winemaking, such as sulfites, sugar, or acid. The goal of natural winemaking is to let the true expression of the grapes and the terroir shine through in the final product. As a result, natural wines can exhibit unique flavors and characteristics that reflect the specific region and vineyard where they were grown.

At Hyphen Natural Wines, you can expect to find a carefully curated selection of natural wines from various regions around the world. They often have wine tastings on Saturdays from 3 – 5 pm. Check their Facebook page or call 760.459.9199.

Palm Springs MICHELIN Restaurant Guide

In 1889, Andre and Edouard Michelin founded their tire company. In order to help motorist develop their trips, they produced a small guide filled with handy information for travelers. Among other things, it included a listing of places to eat or take shelter for the night. From there, a brand new MICHELIN Guide was launched in 1920.

Following the growing influence of the guide’s restaurant section, the Michelin brothers recruited a team of mystery diners to visit and review restaurants anonymously. The MICHELIN Guides are now best-sellers and rates over 30,000 establishments in over 30 territories.

These are Palm Springs MICHELIN’S restaurant guide recommendations, written in their words.

4 Saints

Cuisine: Mediterranean
Set on the seventh-floor rooftop of the Rowan Hotel, this is the highest perch in all of downtown. The sweeping views of the San Jacinto Mountains that will really make you swoon. Chef Ysaac Ramirez lends a Southern twang to a shareable menu replete with seasonal produce, as in grilled purple sweet potatoes with creamy Alabama white barbecue sauce and pickled red chiles.

Bar Cecil

Cuisine: American
Reservations here book weeks in advance, so if you’re seeking a spur-of-the-moment meal, your best bet is to arrive before doors open and put your name down for a coveted bar seat. It would be easy to spend a small fortune here on items like roasted king crab legs or Ossetra with blini, but hearty American fare, like a signature burger dressed up with melted Comté, is still very much in fashion.

Boozehounds

Cuisine: International
What’s in a name? In this case, at least, there’s a tongue-in-cheek précis: a dog-friendly cocktail bar. Diners and their canine confrères can enter a spacious enclosed patio area through a separate “doggy door.” The stylish indoor space remains a humans-only domain, where the focus shifts to a top shelf drinks menu (replete with dog-themed nomenclature, naturally), as well as an appealingly eclectic bar menu that spans both snacks and more substantial fare.

Cheeky’s

Cuisine: American
Bacon is in the air at this perpetually packed daytime-only hotspot. This kitchen taps into the area’s bounty, with most of the produce hailing from within 100 miles. The quirky menu, divided between breakfast and lunch options, changes weekly, offering dishes like birria hash with poached eggs. Don’t miss the “bacon flight,” a selection of five strips of various flavors, ranging from apple cinnamon to jalapeño.

Colony Club

Cuisine: American
This Moroccan-style oasis at the plush Colony Palms Hotel has history and charm to spare, having once been the stomping ground of stars like Clark Gable and Humphrey Bogart. In keeping with the pool-party vibe, the menu is laid-back, from snacks like edamame hummus, to heftier fare like a grilled pork chop with cheesy polenta. To finish, a frosted carrot layer cake with pineapple and toasted pecans is just right.

Tac/Quila

Cuisine: Mexican
Amidst the hacienda-inspired elegance of this popular venue, you may find yourself flanked by suit-clad business types quaffing top-shelf tequila on one side, and on the other, poolside-tanned tourists with clothes thrown over their bathing suits as they sip from margarita flights— and everyone seems perfectly at ease. Likewise, the sizable menu offers room for both street tacos with typical fillings like carne asada or al pastor, as well as more upscale options like lobster and seared ahi tuna.

The Barn Kitchen at Sparrows Lodge

Cuisine: Californian
Once an exclusive getaway for Hollywood elites, the privileged serenity of this quaint refuge no longer requires a SAG card to gain entrance (though you’ll need a reservation if you’re not staying at the property). Matching with the general wellness retreat aesthetic, the ingredient-driven cooking tends towards wholesome Cali-style simplicity—think fresh salads, grilled cauliflower steak with sauce vierge and the requisite avocado toast at lunch.

Workshop Kitchen & Bar

Cuisine: Californian
Farm-to-table food may seem like an impossibility in the middle of the desert, but nearby Coachella Valley is actually one of the nation’s most productive regions. A dedicated garden in Rancho Mirage, along with a sizeable herb planter behind the kitchen, furnishes peak-season produce for wood-fired dishes like a flat iron au poivre, and even a simple yuzu tart is prettied up with farm-fresh raspberries and wood sorrel.

Walt Disney’s Plane at Air Museum

The Palm Springs Air Museum celebrated Walt Disney’s 121st birthday with the opening of a new exhibit to accompany Walt Disney’s Grumman Gulfstream I airplane. Rarely exhibited items from the interior of the aircraft—also known affectionately as “The Mouse”—are now on display at the Palm Springs Air Museum.

Walt-Disneys-Plane-Mickey-Mouse-One

A Brief History of Walt’s Plane

Walt Disney acquired the Gulfstream I airplane in 1963. The interior was initially designed with creative input from both Walt and his wife, Lillian. It seated up to 15 passengers and included a galley kitchen, two restrooms, two couches, a desk, and nods to the mouse who started it all.  It also included matchbooks and stationery adorned with a silhouette of Mickey Mouse.

walt disney plane interior drawing

walt disney-plane-interiror

In November of 1963, Walt Disney and several of his top executives were in the plane flying over Florida trying to determine where they might build an east coast entertainment venue and a community of tomorrow. The ended up touring Ocala as well as other regional sites. They then boarded the plane and flew over the Orlando area. That’s it,” said Walt peering down at the spot where his vision would become a reality. Upon return to California on Nov. 22, 1963, they just learned President Kennedy had been shot.

In 1967 the FAA gave the Disney plane special call letters: N234MM–the N denotes a plane, and the MM is short of Mickey Mouse. Walt’s pilots would initially use the proper form of identification when they approached an airport, “two three four metro metro.” Then they would try “two three four Mickey Mouse.” It did not take long until F.A.A. controllers routinely called N234MM “Mickey Mouse.” That’s how the plane got nicknamed just “The Mouse”.

Throughout its 28 years of service to The Walt Disney Company, the plane flew 20,000 hours and transported an estimated 83,000 passengers before it was decommissioned.

Plane’s Multiple Uses

Walt’s plane flew a total of 277,282 miles back and forth between Burbank and New York to oversee preparations before and during the 1964–1965 New York World’s Fair. They brought iconic attractions such as “it’s a small world” to an East Coast audience and, later, to Disneyland.

The plane also took Disneyland to new heights as Walt found inspiration for the look of the Pirates of the Caribbean attraction.  It happened as he flew over the El Moro fortress in San Juan, Puerto Rico, while conducting research for the now fan favorite.

In just eight days during the fall of 1965, the Gulfstream logged 8,300 miles in 26 flying hours carrying actor Dean Jones, Disney executive Card Walker and others of the Disney sales operation to seven cities pitching the movie That Darn Cat.

“The Mouse” has a star-studded past, having been used for promotional tours for Disneyland as well as for classic movies such as The Jungle Book (1967).

The aircraft also made appearances in The Walt Disney Studios films The Computer Wore Tennis Shoes (1969) and Now You See Him, Now You Don’t (1972). Both films starred Kurt Russell, who also has ties to the desert.

The aircraft has also transported notable guests including Disney Legends Julie Andrews and Annette Funicello, as well as former U.S. Presidents Jimmy Carter and Ronald Reagan, also frequent visitors to the Palm Springs area.

The plane had a wide orange stripe along the windows, a small orange circle with a Mickey Mouse head on the tail, and no company name or theme park name. At the time that Walt used the plane, it looked like any other plane, with no distinct Disney markings or artwork. It was painted blue and white in 1985.

Walt’s plane embarked on goodwill tours and character visits to children’s hospitals, adding to the company’s history of giving back to the community.

It was retired on Oct. 8, 1992 and was on the backstage tour at Disney MGM Studios.

It spent many years beginning in 1993 as an exhibit on the backlot tour in the green area behind Residential Street. When the area was converted into the Lights, Motors, Action attraction, it was relocated to behind the bleacher seating where guests could still view it as they filed into the venue.

However, with the area being transformed into Star Wars: Galaxy’s Edge, the plane was removed and no one seemed to know what happened to it or if it had even been completely dismantled.

In March 2018, the plane was located, thanks to aerial photography done by Nearmap, over a restricted backstage area near the water treatment plant off of Western Way.

New Walt Disney’s Plane Exhibit

This new exhibit highlights the history of the plane, showcasing its significance to The Walt Disney Company’s history and its relevance to the Palm Springs area.

Items include a customized instrument panel originally located near Walt’s favorite onboard seat that allowed him to monitor flight conditions. A telephone handset that gave Walt a direct line of communication to the pilot in the cockpit. A flight bag featuring an image of Mickey Mouse sitting on the tail of the iconic plane, and much more. These items are on long-term loan from the Walt Disney Archives to the Palm Springs Air Museum.

Disney Plane Restoration

Rebecca Cline, director of the Walt Disney Archives, announced that the Palm Springs Air Museum, in conjunction with Phoenix Air, will restore and recreate the interior of the Gulfstream I to resemble what it looked like when Walt flew it in the 1960s. “We are so happy to have Walt’s plane make a landing at the Palm Springs Air Museum, just a few miles from where Walt and his family had vacation homes at Smoke Tree Ranch. It is an ideal setting for this incredible icon.”

The restoration and recreation are anticipated to take approximately two years.

Museum Vice Chairman Fred Bell said, “We are so thrilled to partner with the Walt Disney Archives on this amazing restoration project. The Palm Springs Air Museum has restored over 60 aircraft in its 26-year history. Phoenix Air Group out of Cartersville, Georgia, has offered to donate any parts we need. Phoenix Air Group is a worldwide provider of aviation services, and at one point, owned and operated 20% of the world fleet of Gulfstream I’s flying at the time. We know that we have a special responsibility to Walt Disney, to the Archives, and to the millions of Disney fans around the world to do this work as accurately as possible so that the airplane can be enjoyed for decades to come.”

Palm Springs Progressive Dinner – “Hipster Cool”

Part 1 – In a Delicious Four-part Series

By Barbara Beckley

So little time – so many fine independently-owned restaurants. It’s true. Palm Springs may have more independent and chef-owned bars and restaurants per capita than any town around. So when you only have a couple of nights – be creative! Savor the dining scene with a progressive dinner! Cocktails, entrée, and a nightcap/dessert at three different restaurants in one glorious evening!

A progressive dinner is a type of dinner party where each course is served at a different location. Guests typically move from place to place for each course, ending with dessert. It also combats the tendency that we often have to rush through the meal; the travel time in between courses affords extra opportunities to chat with friends and family. Plus it’s just fun!

Here are a few suggestions to get you started – bon appetite!

Where the Cool Kids Drink & Dine

Stop 1

Let Tiki torches light the way to cocktails at the Bootlegger Tiki Cocktail Bar at the site of the original 1953 Don the Beachcomber Tiki restaurant in downtown Palm Springs.

Sit at the bar, or in a booth, and let the Polynesian décor – puffer fish chandeliers, paintings of Betty Page-style hula girls, woven tapa walls – channel the good-time cocktail gods. Open the drink menu and – Mai Mai My! The handcrafted rum-based libations are as unique and delicious as their names.

Sip “All Hands on Deck,” featuring Copalli White Rum, Uruapan Anejo, Lemonhart 151, Giffard Fraise Des Bois, Pineapple, Lemon, Grapefruit, Passionfruit, Grenadine, Lemongrass, Angostura Bitters and a Peychauds Float. Or maybe “A Familiar Face,” with Smith & Cross rum, Rhum Barbencourt, Dry Curacao, Lime, Orgeat, Passionfruit, Cinnamon and Herbastura Bitters. Or go retro! With Tiki classics like the “DonnBeach 1934 Zombie,” concocted of Plantation 5-year Gold, Coruba Dark Rum, Hamilton 151, Grapefruit, Lime, Falernum, Grenadine, Cinnamon and Herbastura Bitters. Better yet, be surprised with the “Dealers Choice.” As the menu says, “We won’t do you dirty…unless you’re into that.”

Stop 2

Then walk across the street to Workshop Kitchen & Bar. Its way-out American cuisine by Chef-owner Michael Beckman and innovative presentations, inside an old 1926 movie house, is the “New Gen” talk of the town.

Sit in one of the huge concrete booths. Or at the popular communal dining table. Easy to see why Workshop Kitchen & Bar won the James Beard Foundation Award for Design.

Open the menu for an American-Swiss-French-German-California free-for-all. Chef Beckman and co-Chef Joe Mourani met while studying cooking in Lyon, France. Oh my! Begin with the smalls, perhaps the not-what-you-expect “Beets & Citrus,” with date Labneh, mint, ras el hanout, walnuts and lemon vinaigrette. Or “Scarlett Runner Beans,” with pork jowl, collard greens, tomato confit, black garlic aioli and grilled bread.

For the main – the Flannery Flat Iron Steak Au Poivre is a great American/French cross-over. And the market-fresh fish – whatever the day’s catch – with corn nag, Sungold tomatoes, Jimmy Nardello peppers, basil, dill and grilled lemon. C’est magnifique.

Stop 3

Top off the evening with a very civilized nightcap and dessert in Manhattan. Well, you’ll feel like it’s New York – at the smooth sophisticated PaulBar / Food, a short drive on East Vista Chino Road. Talk about good taste. A magnificent mahogany bar, dim lighting, men in bow ties. PaulBar is there to welcome you to a cozy corner of the world.

Order the “Paul Cosmo,” with vodka, lime, triple sec, agave and cranberry. Or his celebrated “Black Martini” of old overholt rye, averna amaro and orange bitters.

Dessert? Equally divine. “Caramel Pot de Crem” of caramel French custard, topped with Maldon sea salt; and “Chocolate Pot de Crem,” with chocolate French custard, house whipped cream and orange slice.

Make Mine Hipster Haute for Cocktails & Cuisine

Stop 1

See and be seen at The Tropicale Restaurant & Coral Seas Lounge on East Amado Road in downtown.

Happy Hour gets going early among the jungle foliage of this indoor-outdoor hot-spot, painted in pink and green reminiscent of the Beverly Hills Hotel. Get the “A” spot at the high top tables between the breezy patio bar and dining room.

If you’re a party of four or more – order a pitcher! Oh my – of “Carmen Miranda Peach Sangria;” or classic mojitos; or margaritas (mango or strawberry Jalapino); or “Tropicale Mai-Tais.” Or – if you dare – the “Kaman Iwana Lei Ya,” with Cruzan coconut rum, Whaler’s Dark Rum, mango, pineapple and guava rums, crème de banana, fruit juices and Bacardi rum. Crazy cool! Also huge martinis. And a killer wine list of organic and sustainable from Napa, Sonoma and the world. Maybe soak up the alcohol with favorite “Crispy Tempura Green Beans” or “Steamed Edamame with Sea Salt.”

tropicale

Stop 2

Next, swing into the elegance of Copley’s on Palm Canyon a couple of blocks away. It’s helmed by owner-executive chef Andrew Copley, a fun-loving Brit, who worked at 5-star establishments worldwide and luckily chose the former estate of Hollywood heartthrob Cary Grant for his own. Savor his award-winning upscale American flavors infused with Euro and tropical twists. And very sophisticated wine list.

A favorite seasonal starter is the “Little Gem Salad,” of honey roasted peppers, shaved fennel and cucumber, asparagus tips, Cotija cheese, chorizo, pepitas seeds and red-wine-and-mustard dressing! Choose mains like “Peppered Seared Scottish Salmon,” with cilantro rice, petite vegetables, roasted pineapple salsa, and coconut mint-and-cucumber dressing. Or outrageous “Prime New York Steak,” with caramelized onion-and-fennel, sautéed asparagus, and Truffle parmesan fries! Maybe the hipster vegetarian “Sesame Seared Tofu,” with basmati rice, sautéed baby carrots, crispy mango-papaya salad garnish, and citrus-ginger dressing. Applause, please!

Stop 3

Call it a fabulous night at Counter Reformation – the ultimate inner sanctum at the Parker Palm Springs a short drive on East Palm Canyon.

Belly up to the bar as if you were in a dark, sultry Parisian “shrine to wine.” Toast to good fortune with unexpected reds, whites and champagne from France, Spain, Portugal, Uruguay, Australia and Italy. Perhaps the Charles De Cazanove Champagne from Reims, France. Or reds like Bodega Bouza Tannat 2017 from Uruguay, and Chinon Le Grand Bouqueteau Reserve Cabernet Franc 2018 from the Loire Valley. Whites? Try the off-the-cuff Petra Unger Q Gruner Veltliner from Kremstal, Australia, and La Casa De Las Locas Godello 2019 from Monterrei, Spain. The small bites aren’t dessert-ish. But close enough with the Gougeres pastry cheese puff with comte espuma filling. And Panisse chickpea fries with smoked crème fraiche, Calabrian gastrique and caviar.

Palm Springs Progressive Dinner – “Contemporary & Classic”

Palm Springs Progressive Dinner – “Old & New”

Palm Springs Progressive Dinner – “Locals’ Delight”

Hyphen Wines, Naturally-

By Kevin Carlow

Hyphen Wines is dedicated to connecting customers to delicious, high-quality natural wines.

Here in Palm Springs it has become almost cliché to toss around the phrase “Rosé all day!” With wine trends changing so much over the last few years, is that still hip? “I’m a huge fan of rosé, especially at pool time, and even on through until dinner. For me rosé doesn’t really have a season.”

That’s according to local wine guru John Libonati, who says that classics like rosé and bubbly are still a perfect choice. John and I are talking about wine at Hyphen, the shop that he owns in the Uptown Design District, and we’re surrounded by a rainbow of wines that are backlit by the late-morning sun. It’s clear that rosé and bubbles are not all that Palm Springs has on the menu these days! Everything from timeless Bordeaux to trendy “orange wine” is available for purchase here.

I asked John about his background and what brought him to Palm Springs, and about the history of the shop. “I’m originally from New York City, but had a wine shop in Boston for almost seven years, and from there I went back to New York. I thought I would open Hyphen in New York, but it was such a saturated market and rents were out of control. Instead we decided to move to Palm Springs.

About John Libonati

John attended culinary school at Institute of Culinary Education and dreamt of opening his own restaurant someday. After interning for Bill Yosses at Boulé Bakery, and Mario Batali at Pò, John switched gears and opened Brite Bar in West Chelsea, a lounge and night club. During his Brite Bar years, John’s interest in wine blossomed.

In 2010, John and his husband Chris moved to Boston where he completed the Wine Spirit Education Trust programs. On a trip to London, he met Isabelle Legeron, who introduced him to the world of natural wines. That experience became the turning point. It inspired John to educate himself about the benefits of natural and organic wines. And with that, John went on to open Social Wines, a natural wine shop in South Boston.

After nearly seven years running Social Wines, it was time for a change. After a summer in Europe visiting some of his favorite natural wineries, John and Chris moved to Palm Springs, CA, where he launched hyphen– wines, a shop committed to bringing natural and organic wines to the local market. John and hyphen– are excited to bring passion and expertise to our community!

Why the name Hyphen-?

“The shop is a destination. People that come to the shop not only want to buy wine, they also want to learn about wine. They’re serious.” Almost on queue, a serious oenophile (a connoisseur of wines) comes in to chat with John about his latest curated picks, and leaves with a bounty of  intriguing  bottles.

So, why the name Hyphen-? “A hyphen connects (used to join words), and what I’m trying to do is connect people with cool wines.”

hyphen logo

Wine Trends

I asked about changing wine trends, and “orange wine” specifically. Why have these risen in popularity locally? “Because of the festivals, people were coming in [from all over the country] and they were into orange wines. Then more locals started hearing about orange wines. I would just tell people, do not think of a wine when you’re drinking this, get wine out of your mind, because it’s not like anything you’ve ever had before. Think of it as a cocktail. The flavor profiles just go on and on, they can start out with aromatics that are so incredibly floral, and fruity, you might think it’s going to be sweet. The extended skin contact creates a ton of tannin, which makes the wine very dry. The palate keeps going on.” Orange wine is just one of the many organic wine options available at Hyphen wines.

Group of unrecognizable women tasting wine . Comparing appearance, smell, aroma,t aste, aftertaste, holding wineglasses on the stems. The closest person to he camera is in focus is holding a glass of red wine and looking at its color. It's summer sunset, image is orange toned.

Natural Wines

I asked John about his ethos when it comes to selecting wines. “At a minimum, all of the wines have to be organic, they don’t have to be ‘certified’, but I will do the research. I will call the winery, and [I will] ask them about what their practices are.” While ‘biodynamically farmed’ is catching on worldwide, for John, the label ‘sustainable’ doesn’t make the grade. “The regulations are too loose, I find something ‘sustainable’, and I call and I find out they still spray. Your sustainability kind of goes out the window.”

Biodynamics started in the 1920’s with an Austrian philosopher named Rudolph Steiner. It is a holistic and homeopathic manner of farming that focus on ideal days for harvesting, pruning, and watering. It is the oldest, anti-chemical agricultural movement that predates the creation of organic farming by about twenty years. Biodynamic wines much be certified.

biodynamic Wine-Calendar

Aside from the environmental concerns, why organic and biodynamic wine? “I don’t want people hooked on the same wine every single time. It shouldn’t taste the same every year. We don’t have the same seasons every year, and yet somehow there is wine that tastes the same every single year. It’s because [the wines are] manipulated with a ton of chemicals to taste that way. There are a handful of popular wines out there that add a ton of sugar, because they want to keep you addicted.” Organic doesn’t have to mean weird and funky, though. “One of the most famous wines in the world is a natural wine, but if you tell the people who are spending thirty thousand dollars on it that, they will say ‘No, it’s absolutely not.’”

Hands of a migrant worker holding cabernet sauvignon wine grapes in vineyard with copy-space.

Hyphen Wine Recommendations

Of course, no trip to Hyphen wines would be complete without bringing a couple of bottles home. I asked John for a few recommendations.

Le Puy Bordeaux “Emilien” 2019 [and the vineyard’s rosé as well]; “They’re grown on the same soils as the grand cru vineyards, but they’re not charging the grand cru prices.”

Scala “Ciro’” Rosé; “Last year it was hinting more towards an orange wine. This year it is [also] crazy good, it has a little bit more fruit to it, it has a touch more tannin, and it just drinks like a single malt scotch.”

Redentore Pinot Grigio; “This is probably the best pinot grigio I’ve ever had. I’ve tasted a lot of pinot grigios and tried to bring in others, but nothing drinks like that, it’s textured, it has weight, it has body. People keep coming back for it.”

redentore pino grigio wine hyphen le puy

John wants you to enjoy your wine, but one thing he always comes back to is a lot more important than a glass of vino. “Make good quality wine, and do better for the planet with what you’re doing.” Cheers to that, and rosé all day!
